1. First you will need to shuck the corn. My kids hate this part because they hate the corn silk hairs. They complain they’re too hard to get off the corn, but it is worth the time and effort to really get that silk off the corn before you process it.
2. Next you need 12 cups of corn, cut off the cob. A great tool to cut it off the cob quickly is one that you can buy from any Pampered Chef independent consultant. I have also used an electric carving knife in the past.
3. Barely cover the corn in a large pan with water and put in one cube of real butter. Stir the corn, water and butter with a long spoon while heating it to a boil. Boil for five minutes, stirring all the time.
4. After five minutes of good boiling, add 3 tablespoons of granulated sugar and 2 teaspoons of salt to the corn and continue to stir and boil for an additional two minutes.
5. Immediately after the final two minutes of boiling is done, divide the corn onto two large cookie sheets. You want these cookie sheets to be elevated off the table or counter top with canning rings underneath or something like that to let the air pass underneath them. The point here is to cool the corn off as quickly as possible. If you can, turn a fan on next to the corn to help speed up the cooling process.
6. After about five to ten minutes of cooling, pour the corn into a large bowl and proceed to use a measuring cup to put it into freezer bags. I usually put three cups into quart freezer bags and this amount will feed my family of six with good portions at a meal. If you have a smaller family, then you can get away with less and with smaller bags.
Making freezer corn doesn’t take a long time at all and if you can involve your family, it is a good way to bond and learn to enjoy working together.
